I've recently done some self-evaluation - mainly trying to figure out what I'm supposed to do with my life, and in this process I realized that I procrastinate...a lot. Putting aside the fact that procrastination is a bad habit and apparently it can indicate underlying psychological issues, (I read it in an article), what I do while I'm procrastinating is indicative of what I clearly enjoy doing. One of these procrastination activities of mine is cooking! So, I figured I would join the million other food bloggers out there in the hopes that I have something new to offer, and I'll probably add some music or art related tidbits in here to spice it up (no pun intended?).
I often have a randomly stocked refrigerator, but I try to keep some basics in there, so I often find myself inventing new recipes with the ingredients I have, or replacing certain ingredients in other people's recipes. For example I just made some scones and I didn't have sour cream, but I had ricotta cheese, so I just used that. In this same recipe I didn't have enough flour, so I put whatever amount of flour I had left and then for the rest I used oats-that-i-put-into-a-blender-flour, and somehow these scones turned out fucking delicious. Often times I just eat the food and forget how I made it, so, I thought I'd start writing them down here.
So, these scones that I've been talking about - this is the first improvised recipe I'll share with you. Exciting right?
I didn't take pictures until after I already made/ate a few of these, so they're not the best pics but just to give you a *taste* of what these babies look like. Also there are raspberries inside but you can't see them. Secret raspberries if you will.

Recipe:
- 1/2 cup of ricotta cheese
- 1/2 tsp baking soda
- 1 1/2 cups of white flour
- 3/4 cup oat-in-a-blender flour
- 1/4 cup of white sugar
- 1/4 cup of coconut sugar (or you can just do one half cup of all white sugar this is just how I did it)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup of coconut oil
- 1 egg
- 1/2 cup of raspberries or raisins or chocolate chips or whatever fruit you want!
Directions:
- Preheat oven to 350 degrees.
- Take your bowl with your 1/2 cup of ricotta cheese and mix in the baking soda, sugar, coconut oil, salt, egg, baking powder. Whisk until smooth.
- Whisk together the flour and "oats in a blender" flour (aka oat flour I guess)
- Add the dry mixture into the wet mixture.
- The dough for scones is usually dryer than these but these don't have to be that dry. If needed add milk until it's combined.
- When the dough is combined, mix in the fruit. I fold in delicate berries by hand.
- Divide into cookie sized circles, or hearts, or triangles, or whatever shape you damn well please!
- Bake on a well greased or parchment lined baking sheet for 15-20 minutes, until the scones are browned nicely on the bottom and slightly on the top. Watch them carefully!
- Let cool, serve and enjoy! (I like them with butter but they're honestly so good plain)
